Chickpeas
Also known as gram, garbanzo, garbanzo bean or Egyptian pea is a popular and versatile pulse that is frequently used in hummus, falafel and chana masala. It also works well in salads, soups, stews, curries and is popular across Indian, Mediterranean, and Middle-Eastern cuisines.
The water from cooked chickpeas (or from a can) can be whipped for 3-6 minutes using a mixer to produce aquafaba, a popular egg-replacement for vegan baking.
As a “dessert crop”, chickpeas prefer to be dry compared to our other beans, which is why they are grown in the more arid prairie provinces of Canada instead of Ontario, Quebec or the coasts.
